Hearty Winter Stew (Serves 4)

Ingredients:

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 2 carrots, chopped

  • 2 parsnips, chopped

  • 1 small swede, diced

  • 1 can (400g) chopped tomatoes

  • 500ml vegetable or bone broth

  • 1 can (400g) cannellini beans, drained and rinsed

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1/2 tsp ground cinnamon (optional, for warmth)

  • Salt and pepper to taste

  • Optional: 300g grass-fed beef or lamb, cubed

Method:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until soft and fragrant.

  2. If adding meat, brown the cubed beef or lamb in the pot until sealed on all sides.

  3. Add the carrots, parsnips, and swede. Stir to coat in the flavours.

  4. Pour in the chopped tomatoes and broth. Add the thyme, rosemary, cinnamon (if using), salt, and pepper.

  5. Bring to a boil, then reduce the heat and let it simmer for 40–50 minutes, until the vegetables (and meat, if added) are tender.

  6. Stir in the cannellini beans and cook for another 5 minutes.

  7. Taste and adjust seasoning if needed. Serve warm with a side of sourdough or steamed greens.
